    Gardenia is an evergreen shrub of Gardenia in Rubiaceae. It has the functions of curing cold, jaundice hepatitis, insomnia, promoting blood circulation and removing blood stasis. It is a good raw material for making yellow, red and blue natural pigments. Yellow pigment is a kind of rare water-soluble carotenoid pigment, extracted from the fruit of gardenia with hot water or ethanol and refined. Its main component is crocin.
